We derive continuum models of moiré materials valid over the full monolayer Brillouin zone, as required for metals whose large Fermi surfaces are not confined to a single valley. To this end, we introduce an environment-resolved two-center approximation, in which each hopping amplitude depends not only on the distance between the orbitals it connects but also on its position within the moiré cell. Taking the local environment to be set by the disregistry of the two layers alone, these moiré couplings and their full set of harmonics can be learnt from commensurate bilayers at uniform stackings, without fitting. The method shows excellent agreement with ab initio band structures on moiré cells containing a few hundred atoms. Applied to twisted NbSe₂, it yields a continuum model in which moiré effects concentrate at the van Hove singularities, a single-particle starting point for studying moiré-tuned superconducting, charge-density-wave instabilities and their competition.
